The pie crust freezes very nicely. I shape the recipe onto 5-6 discs, wrap them in plastic wrap and place them into a freezer bag. I take out as many disc as I need about 30-40 minutes prior to continuing on with which ever recipe I am baking that day. I personally have not used flat ginger ale and always thought the carbonation to be the reason for how flakey it is. However, I would give it a try. People make pie crust with just water with good success, so why not flat ginger ale. If you try it, let me know how it turns out for you.
