Roasted Tomatoes

I saw Ina prepare these tomatoes on the Food Channel Network and thought they looked real good.

Ina Garten's Roasted Tomatoes
  • 12 plum tomatoes, halved lengthwise, cores and seeds removed
  • 4 tablespoons good olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 2 large garlic cloves, minced
  • 2 teaspoons sugar
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  1. Preheat the oven to 450 degrees F.
  2. Arrange the tomatoes on a sheet pan, cut sides up, in a single layer.
  3. Drizzle with olive oil and balsamic vinegar.
  4. Sprinkle the garlic, sugar, salt, and pepper over the tomatoes.
  5. Roast for 25 to 30 minutes, until the tomatoes are concentrated and beginning to caramelize.
  6. Serve warm or at room temperature.

  1. Oh those look good! And easy! One of my very favorite combination's in the kitchen. Every time I see her name in print I think of In A Garden.

  2. Must try this right away, sounds good.

  3. I saw that episode as well and these look very good.

  4. something new to try, great idea!

  5. This is so ironic that you're posting this 'cause I made these for the first time last week. All I did was sprinkle the olive oil and a little bit of salt over the roma tomatoes, and broil them for 10 minutes watching them all the while, and that was my lunch that day, a bowl full of roasted tomatoes, delicious!

  6. This looks delicious!! I think I would add a few toasted breadcrumbs to the top. What a nice light side dish for the holidays.

  7. I am going to try these later today...such a good way of using those beautiful little tomatoes
