Apricot Chicken

When our children were growing up this was our family favorite.
  • 1 cut up chicken or 6 - 8 small flattened chicken breasts 
  • 1 package dried onion soup mix. . or garlic onion 
  • 1/2 cup of apricot jam 
  • 1 small bottle Russian Dressing 
  • a sprinkle of chili peppers for a bit of bite

  1. Spray a 9 X 13 pan with Pam. 
  2. Line the chicken in the pan in a single layer. 
  3. Mix the remainder ingredients and pour over the chicken.
  4. Bake at 350 about an hour and a half. . .
  5. If I use frozen chicken breasts and whole chicken pieces it is 1 1/2 hours but if small chicken breasts it would closer to one hour.

  4. Hmm..I haven't tried this recipe. Sure looks delicious! For a minute I thought it was my supper..we had rice, peas and bbq'd ribs, kind of the same colors.

  5. Hm....well apparently not everyone DOES make this dish. I have never heard of it but it sounds wonderfully easy and great for those who work all day and still want to make a 'fresh' dinner when they get home...hmmm... wonder who that would be!!!! Sounds good...a must try indeed

  6. I have no idea where I got this recipe many years ago (maybe from you? . . . I was just thinking)and I haven't made it for a long time . . . so it was well worth posting even for those who have it and have forgotten about it. But I still think yours tastes better. =)

  7. I knew it would be your recipe, Lovella. It was a favorite dish at my MIL's...and I have made it several times. My kids know the minute they walk in the door that they are having 'grandma's chicken'...it smells wonderful.

  9. i make this dish as well only i have never kicked it up a notch with the chili peppers, that is a good crockpot meal and fall is coming with hectic schedules, thanks for reminding me of this one.

  11. I have made this recipe for years and it is always a hit. If you can't get Russian dressing, Catalina or French dressing is a great substitute. I often make this for large groups using a large box of frozen chicken breasts (20) which I usually thaw in advance and rinse before cooking in a big roast pan. Takes about 1 hr to cook at 350. You will need the larger bottles of dressing and apricot (or peach) jam. I never use the entire pkg. of onion soup mix - shake it first - as it is quite salty (about 1/4 of it for the smaller recipe and 3/4 for the larger one.)

  12. I use jellied cranberry sauce instead of the jam. Very yummy.
