Chocolate Chip Zuchinni Muffins

Oh, this is the cure for an over abundance of zuchinni from the garden. These muffins are very delicious, freeze well and are a cinch to whip up.
My mom started making them for us when I was in elementary school. I think she got the recipe from my friend's mom.
3 eggs
1 c oil
2 c sugar (1 brown & 1 white)
2 tsp vanilla
2 c grated zuchinni
3 c flour
1 tsp salt
1 tsp baking soda
1.5 tsp baking powder
3 tsp cinnamon
1 cup chocolate chips
Combine using the muffin not over-stir!
Bake at 325 degrees for 25-30 minutes.

  2. oh I love all the zuchinni breads and muffins. Every variation is so moist and keeps so well.

  3. PS. I will add photos when I get home from work :)

  4. yum is all I can say. And zuchinni is on the top of list on grocery days...choco chips? Well...need I say more?

  5. Ahh..zucchini, another one of my favorite muffin recipes. Thanks Rachel for sharing the recipe!
I have a friend who once planted 8 zucchini plants..can you imagine the crop she had?? let's just say she 'gifted' a lot of people...

  6. I love muffins and it's always fun to try a new one!

  7. I love muffins, so I'll definitely have to add this recipe to my muffin recipe collection!

  8. These look and sound good! Blessings...

  9. I increased and pureed my zuchinni and decreased the amount of oil. Easy and delicious. The cinnamon really works well with the chocolate. Took the muffins to Bible Study and they all disappeared! Everyone commented on how moist and flavorful they were. No one could tell that there was zuchinni in them.

  10. Can anyone tell me how many muffins this makes? I am needing 3 dozen and not sure if I need to have enough zucchini for 3 batches then? Thanks for your help!

  11. I think it would be quite safe to say that it makes about 2 dozen muffins. Depending on how large you make them, you might be able to get more or less out of that recipe.

  12. Squeeze your shredded zuchinni (I used yellow squash), cut the sugar about in half. Makes two dozen muffins.

  13. These are by far the BEST zuchinni muffins EVER!! They came out perfect. I didn't squeeze the zuchinni, and added closer to 3 cups. My kids said this is there new favorite muffin!!
    Thanks for sharing!
