Cereal Cookies

Cereal Cookies

(makes 22 cookies)

1/2 cup softened butter
1/2 cup white sugar
1/2 cup liquid honey

1 egg

1 tsp vanilla
1 2/3 cup flour
2 tsp baking powder
1/4 cup milk
2/3 cup dried cranberries
1/2 cup chopped dried apricots
2 cups cornflakes
1 cup rolled oats
Line 2 baking sheets with parchment paper. Preheat the oven to 350. Beat the butter, sugar and honey in a medium bowl with mixer until creamy. Add egg and vanilla and beat until well mixed.

Combine remaining ingredients before adding to the honey mixture. Stir until mixed.

Drop rounded tablespoons of cookie batter on the prepared baking sheet about 2" apart. Bake for 15 -20 minutes or until cookies are golden.

  2. My mom use to make cereal cookies that are quite different than these, but your recipe and presentation look fabulous! I will be baking cookies today for my house full arriving tomorrow. My posting is on hold for this week I think as I have little ones everyday and lots of adults coming in and out. The house will be full of yummy food but I don't think I will have time to post. For supper tomorrow I will make Lovella's veggie lasagna but I'm going to add chicken to it. Oh the joy of cooking!Kathy
