Betty 'pulls off ' another great recipe with very simple ingredients. Enjoy these spiced. moist muffins with their sugar/pecan topping with your coffee break today...they are that simple to bake.
- 4 eggs
- 1 1/2 cups sugar
- 1 cup oil
- 2 cups pureed pumpkin
- 3 cups flour
- 1 Tbsp cinnamon
- 2 tbsp baking powder
- 1 tsp salt
- 2 tsp baking soda
- 2 cups raisins
- For topping: brown sugar and pecan bits
Mix wet ingredients, then stir in dry ingredients until moistened. Add raisins. Scoop into muffin tins sprayed with Pam. Sprinkle tops with brown sugar and pecan bits.
Bake at 375 for 30 min.
Yields 2 doz

this is two funny.........this is one of the recipes i was wanting to post and so was the waffles and sauce......you beat me two it, by the time i get the knowhow to post anything i'll have to do something "GLOBAL MENNOMITE" from india or something....smile.

I remember thinking the same when I got the recipe but that is what is says..it is 2 tbsp baking powder..and this recipe does yield 2 doz large muffins.
